Tapioca pearls (sago)
Purple sweet potatoes
Sugar (to taste)
Glutinous rice flour (small amount, just enough to bind)
Prepare the Purple Sweet Potato Filling:
Wash, peel, and cut purple sweet potatoes into small pieces.
Steam until soft, then transfer to a bowl.
Add sugar to taste and mash into a smooth paste.
Form the Filling Balls:
Gradually add glutinous rice flour in small increments, mixing until a soft dough forms (do not add too much flour).
Pinch off small portions and roll them into smooth balls. Set aside.
Cook the Sago Pearls:
Bring a pot of water to a boil.
Add tapioca pearls, stirring to prevent sticking.
Cook until each pearl has a small white core, then turn off the heat.
Drain, rinse with cold water, and drain again.
Wrap the Filling:
Roll each purple sweet potato ball in the cooked sago pearls, pressing gently so the pearls stick to the surface.
Steam the Sago Balls:
Line a steamer with baking paper.
Arrange the sago balls on top.
Once the water boils, steam over medium-low heat for 30 minutes.
