Glutinous rice flour
Water
Prepare the Dough Base
In a bowl, mix glutinous rice flour with water. Stir until completely smooth with no visible particles.
Pour the mixture into a heatproof container and steam for 30 minutes until solid and translucent.
Make Purple Sweet Potato Filling
Steam the purple sweet potatoes until soft.
Add sugar while still hot and mash until smooth to form a thick, sweet paste.
Prepare Glutinous Rice Powder for Dusting
Dry-fry a small amount of glutinous rice flour over low heat to create a non-sticky dusting powder. Set aside.
Assemble the Rolls
Dust a surface with cooked glutinous rice flour. Place the steamed rice dough on it and knead slightly to flatten.
Roll the dough into long strips. Flatten each strip and fill the center with the sweet potato paste.
Roll up to seal and form a log. Cut into small bite-sized pieces.
Serve
Lightly coat the outside with more cooked rice flour to prevent sticking. Serve at room temperature or chilled.
