2–3 sweet potatoes (steamed and mashed)
2–3 hand-grasp pancakes (store-bought or homemade)
Shredded mozzarella cheese (as needed)
1 egg yolk (for brushing)
Black sesame seeds (for garnish)
Steam and mash the sweet potatoes
Peel and steam sweet potatoes until fully tender. Mash them into a smooth paste while warm. Set aside.
Assemble the rolls
Lay a hand-grasp pancake flat and evenly spread a layer of mashed sweet potato over it. Place a generous strip of shredded cheese across the center.
Roll and chill
Roll the pancake tightly into a log shape. Wrap with parchment paper and refrigerate or freeze for 10–15 minutes to firm up, making it easier to cut.
Slice and prep
Cut the chilled roll into bite-sized pieces. Place them on a parchment-lined baking tray.
Add egg wash and sesame
Brush the tops with egg yolk and sprinkle black sesame seeds over each piece for a beautiful golden finish.
Bake
Preheat your oven to 180°C (356°F). Bake for about 18–20 minutes, or until golden and the cheese is melty.
