1 cup (about 200 g) purple rice, cooked until sticky
200 g taro, peeled and steamed
2 tbsp milk (or coconut milk for added fragrance)
1 tbsp purple potato powder (for enhanced color and flavor)
2–3 tbsp meat floss
A pinch of salt (optional)
Cook the Purple Rice: Rinse the purple rice thoroughly and cook it in a rice cooker or on the stovetop until it becomes soft and slightly sticky. Let it cool slightly.
Prepare Taro Paste: Steam the taro until tender. Mash it while hot and mix in milk and purple potato powder. Stir until smooth and creamy. Add a pinch of salt if you prefer a less sweet flavor.
Layer the Sandwich: Wet your hands slightly to prevent sticking. Take a small portion of cooked purple rice and press it into a flat disc. Spread a generous layer of taro paste on top, sprinkle meat floss over the taro, then cover with another layer of purple rice.
Shape and Press: Gently but firmly press the layers together, shaping into a rounded sandwich or flattened ball, ensuring the fillings stay compact.
Serve and Enjoy: Serve fresh as a snack, or wrap in plastic to store for later. Best enjoyed on the same day for optimal texture.
