Ingredients:
Carrots
Glutinous rice flour
White sesame seeds
Oil (for frying)
Sweet & Sour Sauce:
White sugar
Rice vinegar
Water
Tomato sauce
Instructions:
Prepare the Carrot Dough
Wash, peel, and slice carrots thinly.
Steam for 20 minutes until fully cooked.
Mash into a smooth puree using a fork.
Add 2 tablespoons of glutinous rice flour and knead into a smooth, non-sticky dough.
Shape and Coat
Pinch off small pieces of dough and roll into balls.
Dip each ball into cold water, then coat evenly with white sesame seeds.
Fry the Balls
Heat oil to about 60% hot (medium heat).
Fry the balls until they start to set, then turn over and continue frying until golden brown and crispy.
Remove from oil and drain.
Make the Sweet & Sour Sauce
In a bowl, combine 1 tablespoon sugar, 1 tablespoon rice vinegar, 1 tablespoon water, and 2 tablespoons tomato sauce. Stir well.
Heat a small amount of oil in a pan, pour in the sauce, and simmer on low until thick and bubbling.
Glaze and Serve
Add the fried carrot balls to the sauce. Stir-fry quickly and evenly until coated.
Serve hot for the best texture and flavor.
