100g butter (softened)
45g powdered sugar
30g whole egg (about ½ egg)
130g low-gluten flour
Strawberry jam (for filling)
Pink cookie dough or fondant (for heart decoration)
Make the Dough
In a mixing bowl, cream the softened butter and powdered sugar until light. Add the egg and mix well. Sift in low-gluten flour and stir to form a soft dough.
Roll and Cut
Place wax paper over the dough. Roll it out to a 3mm thickness, then cut into even squares (about 5x5 cm).
Add the Jam
Place a small dollop of strawberry jam in the center of each square.
Shape the Envelope
Fold two opposite corners over the jam to form an envelope shape, gently pressing them down to seal.
Decorate with Hearts
Use a small heart cutter to cut pink dough or fondant hearts. Place one heart in the center of each envelope to secure the folds.
Bake
Preheat the oven to 150°C (300°F). Bake the cookies for about 20 minutes. Cover with foil halfway through to prevent over-browning.
Cool and Serve
Let the cookies cool completely before serving. They’re as cute as they are delicious!
