Ingredients:
Dumpling wrappers (store-bought or homemade)
2 carrots, julienned
1 zucchini, julienned
Salt (for marinating vegetables)
2 eggs
2 tbsp chopped green onion
2 tbsp shredded black fungus (wood ear mushrooms)
1 tbsp oyster sauce
1 tsp sesame oil
A pinch of pepper
Instructions:
Prepare the Vegetables:
Grate the carrots and zucchini into thin matchsticks. Add a pinch of salt, mix well, and let marinate for a few minutes. Then squeeze out excess moisture using your hands or a clean towel.
Cook the Eggs:
Scramble the eggs and let them cool. Chop roughly if needed.
Make the Filling:
In a bowl, mix the squeezed vegetables with scrambled eggs, chopped green onion, shredded black fungus, oyster sauce, sesame oil, and pepper. Stir thoroughly to combine.
Prepare Wrappers:
Slightly roll out or press the dumpling wrappers to make them thinner and easier to fold.
Assemble Dumplings:
Place a spoonful of filling onto the center of each wrapper. Fold both sides inward to create a long rectangular packet or purse shape.
Steam the Dumplings:
Arrange the dumplings in a steamer lined with parchment paper or lightly oiled. Steam over boiling water for 10–12 minutes, or until the dumpling skins turn translucent and glossy.
Serve:
Let cool slightly and serve warm. Enjoy as-is or with a light dipping sauce.
