150g dried red beans (adjustable)
Warm water (for soaking and dough)
Glutinous rice flour (enough to form dough, approx. 150g–200g)
1–2 tbsp sugar (to taste)
Soak the Red Beans:
Rinse the red beans and soak them in water for at least 2 hours until they begin to plump up.
Cook the Beans:
Drain the soaked beans and simmer in fresh water until fully cooked and tender. Drain and set aside to cool.
Make the Dough:
In a mixing bowl, add the cooked red beans, a small amount of sugar, and enough warm water to moisten. Gradually add glutinous rice flour while kneading until a smooth, slightly sticky dough forms. Adjust flour or water as needed for consistency.
Shape the Cakes:
Pinch off small portions of dough and shape them into round flat discs or balls.
Steam:
Place the shaped cakes on parchment paper or a greased steaming tray. Steam over high heat for 25 minutes.
Finish and Serve:
Let them cool slightly before serving. Optionally, brush with a little sweetened condensed milk or coconut milk for a shiny, extra-sweet finish.
Tips:
These are best enjoyed warm or at room temperature.
You can substitute the red beans with black beans, mixed grains, or add a splash of coconut cream for added richness.
