Ingredients:
Shrimp paste – enough to spread a thick layer (approx. 200g)
Fresh broccoli – 1 small head, blanched and finely chopped
Eggs – 5
Salt – 1 tsp
Oil – for brushing
Instructions:
Prepare the Shrimp Layer
Lightly brush the bottom of a heatproof bowl or steaming dish with oil. Spread a thick, even layer of shrimp paste on the bottom. This will form the base layer of your squares.
Blanch and Chop Broccoli
Blanch the broccoli florets in boiling water for about 1 minute, then drain and finely chop them. Set aside to cool slightly.
Make the Egg Mixture
In a mixing bowl, crack in 5 eggs. Add 1 teaspoon of salt and beat the eggs thoroughly. Add in the chopped broccoli and stir until evenly combined.
Assemble and Steam
Pour the broccoli egg mixture gently over the shrimp layer in the bowl. Steam over medium heat for about 20 minutes or until the egg is fully set and the shrimp is cooked through.
Cool and Cut
Let the steamed mixture cool slightly before cutting into bite-sized squares. Serve warm or chilled.
