Ingredients:
Green Dough:
100g all-purpose flour
1g instant yeast
55g spinach juice (strained)
White Dough:
100g all-purpose flour
1g instant yeast
55g water
Filling:
Honey red beans (as needed)
A small amount of water (for sealing dough layers)
Instructions:
Make the Green Dough:
In a bowl, mix 100g flour and 1g yeast.
Pour in 55g spinach juice and stir until a shaggy dough forms.
Knead into a smooth ball and cover. Let rest for 10 minutes.
Make the White Dough:
In a separate bowl, mix 100g flour and 1g yeast.
Add 55g water and stir into a dough.
Knead until smooth, then let it rest for 10 minutes.
Roll Out the Dough:
After resting, roll both doughs into equal-sized rectangular sheets.
Layer and Fill:
Lightly brush the green dough surface with water.
Place the white dough on top of the green one.
Sprinkle generously with honey red beans.
Fold and Shape:
Fold the layered dough into thirds like folding a quilt.
Gently roll it flat again into a log shape.
Slice the log into 1.5–2 cm wide pieces.
Final Proof:
Place shaped rolls onto parchment or a steamer tray.
Let them rest in a warm place until puffy (about 20–30 minutes).
Steam:
Steam over medium-high heat for 15 minutes.
Turn off the heat and let it sit for 5 minutes before opening the lid to prevent collapse.
