1 cup shrimp paste
½ cup mixed diced vegetables (corn, peas, carrots)
Salt and black pepper to taste
King oyster mushrooms (cut into thick slices)
2 tbsp starch (potato or corn)
1 tsp chili powder
1 tsp cumin powder
½ tsp salt
Water (enough to make a batter)
Oil (for air frying)
Make the Filling
In a bowl, mix shrimp paste with diced vegetables, a pinch of salt, and black pepper. Stir until well combined.
Slice the Mushrooms
Cut the king oyster mushrooms into thick, flat slices. Each bite will need two slices to sandwich the filling.
Assemble the Bites
Scoop a small amount of shrimp filling onto one mushroom slice, then place another slice on top to create a “box.” Press gently to secure.
Prepare the Batter
In a separate bowl, combine starch, chili powder, cumin powder, and salt. Add enough water to create a light batter.
Coat the Mushroom Bites
Dip each stuffed mushroom bite into the batter, coating both sides.
Air Fry
Lightly oil the air fryer basket. Place the mushroom bites inside and cook at 180°C (356°F) for 10 minutes.
Flip and Finish
Flip each piece and air fry for another 10 minutes until golden and crispy on all sides.
Serve
Let cool slightly and serve hot. Enjoy the spicy, savory, and crispy textures in every bite!
