1 cup cooked white rice
1 small carrot, finely shredded
¼ cup sweet corn kernels (fresh or frozen)
1 tbsp cooking oil
1 slice of dried seaweed (nori), chopped (for rice mix)
4 slices of luncheon meat (Spam or similar), about 1 cm thick
1 sheet of nori (seaweed), cut into 4 long strips (for wrapping)
Optional: soy sauce, sesame oil, furikake seasoning
Heat 1 tablespoon of oil in a pan over medium heat.
Add shredded carrots and corn kernels.
Stir-fry for 2–3 minutes until the vegetables are soft and fragrant.
Add the cooked rice to the pan.
Stir everything evenly so the vegetables are well incorporated.
Sprinkle in the chopped seaweed and optional furikake or a drizzle of sesame oil.
Stir-fry for another 1–2 minutes until heated through, then remove from heat and let cool slightly.
Slice luncheon meat into even, thick slices (about 1 cm thick).
Heat a clean pan and lightly sear the slices over medium-high heat until both sides are golden and slightly crispy. Set aside.
With clean hands or food-safe gloves, scoop a portion of the rice mixture (about 2–3 tablespoons).
Compress it into a rectangular or oval shape that matches the size of the luncheon meat slices.
The rice should be compact but not overly squished.
Place one slice of fried luncheon meat on the bottom.
Top with the molded rice portion.
Place another slice of luncheon meat on top to form a “sandwich.”
Wrap the whole stack tightly with a strip of seaweed to hold it together.
Serve warm, or wrap in plastic wrap and store in a lunchbox.
Best enjoyed the same day for optimal texture.
