Ingredients:
110g red dates (pitted)
100g low-gluten flour
100g milk
4 eggs
4g baking powder
A handful of walnut nuts (roughly chopped)
White sesame seeds (for topping)
Instructions:
Prep the Dates:
Remove the seeds from the red dates and cut into small pieces.
Add dates to a blender along with the milk and blend until crushed.
Cook the Date Paste:
Transfer the mixture to a non-stick pan.
Cook on low heat, stirring often, until the milk is absorbed and the mixture thickens into a sticky paste.
Let it cool completely.
Make the Batter:
Beat four eggs into the cooled date paste and stir to combine.
Add baking powder and flour. Mix until a thick batter forms.
Fold in chopped walnuts.
Bake:
Pour the batter into a lined or greased square baking pan.
Sprinkle white sesame seeds and extra nuts on top.
Bake in a preheated oven at 170°C (340°F) for 30–35 minutes or until golden brown and set.
Serve:
Let it cool slightly, then slice into squares and enjoy!
