4 eggs
Water (about 3½ eggshells worth per egg, total ~500ml)
Pinch of salt
1 tbsp light soy sauce (for serving)
Chopped green onions (for garnish)
1️⃣ Prepare the egg mixture:
Crack 4 eggs into a bowl and whisk until smooth. For each egg, add about 3½ eggshells worth of water (or use a measuring cup: ~120ml water per egg). Add a pinch of salt and stir well.
2️⃣ Strain the mixture:
Pour the beaten eggs through a strainer into a shallow bowl to remove bubbles and ensure a silky texture.
3️⃣ Steam the eggs:
Cover the bowl with plastic wrap (poke a few holes with a toothpick to prevent overflow). Place in a steamer once the water is boiling. Steam over medium heat for 10 minutes.
4️⃣ Rest and season:
Turn off the heat and let it sit inside the steamer for another 5 minutes to finish cooking gently.
5️⃣ Garnish and serve:
Drizzle with soy sauce and sprinkle chopped green onions on top. Enjoy warm!
