1 medium zucchini
100g shrimp paste (peeled shrimp, finely minced)
1 tbsp oyster sauce
1 tbsp chopped green onions
1 tbsp finely chopped carrot
A pinch of crushed black pepper
Sweet chili sauce (for drizzling)
Cooking oil (for frying)
Prepare the Zucchini:
Slice the zucchini into thick rounds (about 1 inch each). Use a spoon or small cap to gently hollow out the center without cutting through.
Make the Filling:
In a bowl, combine shrimp paste, chopped green onion, chopped carrots, oyster sauce, and black pepper. Mix until fully blended.
Stuff the Zucchini:
Fill each zucchini ring generously with the shrimp mixture, smoothing the top.
Cook:
Heat a pan over low heat with a bit of oil. Place the stuffed zucchini rounds shrimp-side down first. Fry slowly on both sides until golden brown and the shrimp is fully cooked through.
Serve:
Drizzle with sweet chili sauce for extra flavor. Serve warm!
