Fresh squid rings
Shrimp paste (made from peeled, deveined raw shrimp)
Salt and pepper (to taste)

Prepare Shrimp Paste Filling
Finely chop or process raw shrimp into a paste. Mix in a little salt, pepper, soy sauce, cooking wine, and minced garlic. Stir until well combined and sticky.
Stuff the Squid Rings
Spoon the shrimp paste into the center of each squid ring. Press gently to fill and level the top.
Pan-Fry or Grill
Heat a non-stick pan or grill with a bit of oil. Place the stuffed squid rings filling side down first. Cook on medium heat until the shrimp side is golden and firm, about 2–3 minutes.
Flip and Cook
Flip the rings and cook the other side for another 2–3 minutes until the squid is opaque and fully cooked.
Brush or Drizzle with Sauce
Mix a quick glaze using chili oil, garlic, soy sauce, a pinch of cumin, and sesame seeds. Brush or drizzle this sauce over the cooked rings while still hot for extra flavor.
Serve and Enjoy
Serve hot on skewers or in a dish. Garnish with a sprinkle of chili flakes or herbs for presentation.
