Instructions:
Prepare the Filling:
Add shrimp and carrots into a food processor or stuffing machine. Blend until finely chopped into a sticky paste. Mix well and transfer the filling into a piping bag for easy portioning.
Shape the Dumplings:
Lay out wonton wrappers on a clean surface. Evenly squeeze a small amount of filling onto each wrapper. Cover with another wrapper. Use a mold or your hands to press and seal the edges firmly.
Cook the Dumplings:
Bring a pot of water to a boil. Gently drop in the dumplings. Cook until they float to the surface, about 3–5 minutes. Remove with a slotted spoon.
Make the Soul Dip:
In a small bowl, combine soy sauce, vinegar, chili oil, minced garlic, sesame seeds, and chopped green onions. Mix well.
Serve:
Plate the cooked dumplings and serve hot with the dipping sauce on the side.
