1 medium potato, grated
1 small zucchini, grated
1 small carrot, grated
2 tablespoons starch (cornstarch or potato starch)
1–2 green onions, finely chopped
Eggs (1 per nest)
Water (a splash for steaming)
Salt (to taste)

Black sesame seeds (for garnish)
Prepare the Veggies:
Grate the potatoes, zucchini, and carrots into fine matchsticks. Blanch them in boiling water briefly, then drain well.
Mix the Batter:
Transfer the blanched veggies to a mixing bowl. Add starch, chopped green onions, and a pinch of salt. Mix everything together until evenly coated.
Shape the Nests:
Heat a little oil in a non-stick pan over medium heat. Take a portion of the mixture and form it into a ring or nest shape in the pan.
Add the Egg:
Crack an egg into the center of the veggie nest. Pour a small splash of water around the edge of the pan.
Cook and Steam:
Cover with a lid and let simmer for about 2 minutes, or until the egg is cooked to your preferred doneness and the bottom is lightly golden.
Garnish and Serve:
Sprinkle with black sesame seeds and serve warm. Optional: drizzle with ketchup or sriracha for extra flavor.
