For the Dough:
200g all-purpose flour
2g salt
120g water
For the Filling:
150g ground pork (or finely chopped pork)
1 tbsp soy sauce
1 tsp oyster sauce
A handful of chopped green onions
A drizzle of hot oil
For Garnish & Frying:
Extra chopped green onions
White sesame seeds (optional)
Oil for pan frying
Prepare the Dough:
In a bowl, combine flour, salt, and water. Knead into a smooth dough. Cover and let it rest for 30 minutes, then divide into 4 equal portions. Lightly oil the surface of each portion and refrigerate overnight for best texture.
Make the Filling:
Chop or mince the pork if not using ground meat. Add soy sauce, oyster sauce, chopped green onions, and drizzle in some hot oil. Mix thoroughly until the filling becomes sticky and well-blended.
Shape the Flatbreads:
Take one dough portion and roll it into a long rectangular strip. Spread a layer of pork filling on top and sprinkle with more chopped green onions. Fold and flatten into a square or rectangle, sealing the edges.
Pan-Fry:
Heat a non-stick skillet over medium heat with a little oil. Place the flatbread in the pan and fry on both sides until golden and crispy, about 3–4 minutes per side. Optionally sprinkle sesame seeds on top while frying.
Serve:
Let the flatbreads rest for 2 minutes before cutting. Serve warm, and enjoy the juicy meat and crunchy scallions in every bite!
