Strips of tender chicken breast are marinated and coated in a rich, savory Peking-style sauce, then wrapped with fresh cucumber, carrots, and green onion inside a delicate tofu skin. Ingredients:

  • 300g chicken breast, cut into thin strips
  • 1 tablespoon cooking wine
  • 2 tablespoons soy sauce (for marinating)
  • 1 tablespoon starch (for marinating)
  • 1 tablespoon oil
  • 1/2 teaspoon sugar (for marinating)

For the Sauce:

  • 1 tablespoon cooking wine
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet noodle sauce
  • 1 tablespoon starch
  • 1/2 teaspoon sugar
  • 1/2 cup water

For the Wrap:

  • 6 sheets of tofu skin
  • 1/2 cucumber, cut into thin strips
  • 1/2 carrot, cut into thin strips
  • 2 green onions, julienned

Instructions:

  1. Marinate the Chicken:
    In a bowl, combine the chicken strips with 1 tablespoon of cooking wine, 2 tablespoons of soy sauce, 1 tablespoon of starch, 1 tablespoon of oil, and 1/2 teaspoon of sugar. Mix well and let it marinate for 10 minutes.

  2. Prepare the Sauce:
    In a separate bowl, mix 1 tablespoon of cooking wine, 2 tablespoons of soy sauce, 1 tablespoon of sweet noodle sauce, 1 tablespoon of starch, 1/2 teaspoon of sugar, and 1/2 cup of water. Stir until smooth and set aside.

  3. Cook the Chicken:
    Heat oil in a skillet over medium-high heat. Add the marinated chicken strips and stir-fry until the chicken changes color and is cooked through.

  4. Add the Sauce:
    Pour the prepared sauce into the skillet with the chicken. Cook over high heat, stirring constantly, until the sauce thickens and evenly coats the chicken.

  5. Assemble the Wraps:
    Lay a sheet of tofu skin flat. Add a few strips of cucumber, carrot, green onion, and a portion of the cooked chicken. Roll the tofu skin tightly to create a wrap. Repeat for all wraps.
