Dumpling wrappers (or homemade dough if preferred)

Prepare the Filling
In a bowl, mix ground pork with chopped green onions. Season with salt, chicken essence, oyster sauce, light soy sauce, and dark soy sauce. Stir the mixture thoroughly until fully combined. Let it marinate for about 10 minutes.
Wrap the Buns
Dust your surface with flour. Take dumpling wrappers (or roll out small dough circles) and place a spoonful of pork filling in the center of each. Carefully wrap it up like a bun, pleating and sealing at the top.
Pan-Fry and Steam
Brush the bottom of a non-stick pan with oil and arrange the buns flat-side down. Fry on medium heat until the bottoms turn golden brown.
Steam to Finish
Add a small amount of water to the pan (just enough to cover the bottom) and immediately cover with a lid. Steam until the water evaporates and the buns are fully cooked.
Garnish and Serve
Once the buns are golden and crisp underneath, sprinkle with black and white sesame seeds and chopped green onion. Serve hot with soy sauce or vinegar-chili dipping sauce.
