250g red beans (soaked overnight)
1 bowl millet (washed clean)
100g rock sugar
20g brown sugar
500g water
300g bowl-shaped cake flour (Bo Zai cake flour)
1. Prepare the Red Beans and Millet
Soak 250g red beans overnight in plenty of water.
Wash the millet until the water runs clear.
Place red beans and millet into a steamer, steaming over high heat until red beans can be easily crushed.
2. Make the Brown Sugar Syrup
4. In a pot, combine 100g rock sugar, 20g brown sugar, and 500g water.
5. Simmer over low heat until sugars are fully dissolved, then turn off heat and let cool.
3. Prepare the Batter
6. Pour 300g bowl-shaped cake flour into a mixing bowl.
7. Add the cooled brown sugar syrup and stir until smooth with no lumps.
8. Divide the batter into two equal portions.
9. Mix one portion with the cooked red beans, stirring evenly.
10. Mix the other portion with the steamed millet, stirring evenly.
4. Steam the Layers
11. In a steamer-safe plate, spread half of the millet mixture evenly.
12. Cover and steam over high heat for 5 minutes.
13. Pour all the red bean mixture over the steamed millet layer, spreading evenly.
14. Cover and steam over high heat for 15 minutes.
15. Pour in the remaining millet mixture.
16. Cover and steam for 7–8 minutes, then turn off heat and let rest for 5 minutes.
5. Cool and Serve
17. Let the cake cool completely before removing it from the mold.
18. Slice into bars or squares to serve.
