1 steamed yam (about 200g), mashed
2 tbsp dried cranberries
Slices of sandwich bread (white or whole wheat), crust removed
1 egg, beaten
Prepare the Filling
Steam the yam until soft, then mash it with a spoon into a smooth paste. Add dried cranberries and mix until evenly combined.
Shape the Bread
Use a round lid or cookie cutter to press shapes out of the toast slices. Each sandwich will need two rounds.
Assemble the Rounds
Scoop a spoonful of the yam-cranberry filling onto one toast round. Cover with another round and gently press the edges to seal.
Coat with Egg
Dip both sides of the filled toast rounds into the beaten egg to coat evenly.
Pan-Fry Until Golden
Lightly grease a non-stick pan and pan-fry the rounds over low heat. Cook until both sides are golden brown and slightly crispy.
Serve
Best enjoyed warm. These are great as breakfast bites or nutritious snacks for little ones.
