Fresh okra (cut in half lengthwise, seeds removed)
Cornstarch (for coating)
Shrimp paste

Okra seeds (from the pods)
Salt, to taste
Black pepper, to taste
Cooking oil, for pan frying
Prepare the Okra:
Cut the okra in half lengthwise and remove the seeds. Boil in water for about 2 minutes, then drain and set aside.
Dust with Cornstarch:
Lightly sprinkle cornstarch inside each okra half to help the filling stick.
Make the Filling:
In a mixing bowl, combine shrimp paste with the reserved okra seeds, finely chopped carrots, salt, and black pepper. Mix well and transfer the mixture into a piping bag or use a spoon for stuffing.
Stuff the Okra:
Fill each okra pod with the shrimp paste mixture.
Pan Fry:
Heat a little oil in a pan. Place the okra shrimp-side down and fry until golden. Flip and continue frying until both sides are evenly browned and the shrimp filling is cooked through.
Serve:
