300g high-gluten flour
4g salt
170g milk
3g yeast
25g black sesame butter
35g homemade sugar (or regular sugar)
1 egg (for the dough)
Honey beans (for filling or mix-in, quantity as preferred)
1 egg yolk (for egg wash)
Black sesame seeds (for topping)
Prepare the Liquid Base:
In a mixing bowl, combine milk, yeast, salt, sugar, and one whole egg. Stir until evenly mixed.
Add Butter:
Melt the black sesame butter and add it into the liquid mixture. Mix well.
Form the Dough:
Sift in the high-gluten flour and stir until a rough dough forms. Use a spatula or hands to knead into a smooth dough.
First Rise:
Cover the bowl with plastic wrap and let the dough ferment in a warm place until it doubles in size.
Shape the Buns:
Divide the dough into equal portions. Shape into balls and optionally tuck in some honey beans into each bun.
Second Rise:
Place shaped buns onto a parchment-lined baking tray. Let rise again until about 1.5 times larger.
Egg Wash & Topping:
Brush the tops with egg yolk. Sprinkle black sesame seeds on top for extra flavor and a beautiful finish.
Bake:
Preheat oven to 170°C (340°F). Bake the buns for about 20 minutes, or until golden brown on top.
Cool & Serve:
Let cool on a rack and enjoy warm or at room temperature!
