Pancakes:
2 eggs
55 g milk
100 g pancake powder
3 g baking powder
Taro Mochi Filling:
250 g taro
3 g purple potato powder
80 g glutinous rice flour
20 g corn starch
15 g sugar
140 g milk
10 g butter
Step 1: Prepare Taro Paste
Steam 250 g of taro until soft.
Mash the taro and mix in 3 g of purple potato powder for color.
Adjust the texture with a little milk, stirring until smooth and creamy.
Step 2: Make Mochi
In a bowl, combine 80 g glutinous rice flour, 20 g corn starch, 15 g sugar, and 140 g milk. Mix until smooth.
Strain the mixture for a silky texture, then steam for 20 minutes until the mixture thickens.
Add 10 g butter and knead (while warm) until stretchy and firm. Set aside.
Step 3: Prepare Pancake Batter
Whisk together 2 eggs, 55 g milk, 100 g pancake powder, and 3 g baking powder until smooth.
Heat a non-stick pan over low heat and pour a ladle of batter to form small, round pancakes.
Cook until bubbles appear, flip, and cook the other side until golden.
Step 4: Assemble the Dorayaki
Spread a layer of taro paste over one pancake.
Add a thin layer of mochi on top.
Place another pancake on top to form a sandwich.
