Stir-Fry the Filling:
Heat a bit of oil in a pan. Add diced ham, green pepper, and carrots.
Stir-fry until vegetables are softened and fragrant.
Add in the steamed rice and mix well.
Season with soy sauce, salt, and chicken essence. Stir-fry until everything is well combined and flavorful. Set aside to cool slightly.
Prepare the Egg Skin:
Beat the eggs with a pinch of salt.
Brush a non-stick pan with oil and pour in a thin layer of the egg liquid.
Once set on one side, gently flip to cook the other side. Repeat to make more egg skins if needed.
Wrap and Roll:
Place a portion of the fried rice on the egg sheet and roll it up tightly, burrito-style.
Slice and Serve:
Cut the roll into even sections with a sharp knife.
Brush the tops with sweet noodle sauce for a glossy finish.
