1.5g dragon fruit puree
12g milk powder
78g corn starch
1 egg white
Prepare Dragon Fruit Mixture:
In a small bowl, mix the dragon fruit puree with milk powder until well combined. Set aside.

Beat the egg white with a whisk or hand mixer until dense bubbles form. At this stage, add the cornstarch and continue beating until stiff peaks form.
Combine Mixtures:
Pour the dragon fruit and milk powder mixture into the whipped egg whites. Gently fold until the batter is fully mixed and smooth.
Pipe the Batter:
Transfer the mixture into a piping bag. Pipe small dollops onto a parchment-lined tray suitable for your air fryer.
Air Fry:
Preheat your air fryer to 80°C (176°F). Bake the meringue bites for 60 minutes until they are dry and crisp.
Cool and Serve:
Let the bites cool completely before storing. Enjoy immediately or store in an airtight container for later!
