80g unsalted butter (softened)
40g powdered sugar
2 cooked egg yolks (crumbled)
90g low-gluten flour or cornstarch
1g red yeast rice powder or 2 drops pink food coloring (for pink dough)
Small amount of melted chocolate (for eyes and details)
Prepare the Base Dough
Soften butter until a finger leaves an imprint when pressed. Add powdered sugar and mix until smooth.
Add Egg Yolk
Use a spatula to stir in crumbled cooked egg yolks until evenly combined.
Add Flour
Sift in the low-gluten flour and mix until a soft dough forms.
Divide and Color
Separate 50g of dough and mix it with red yeast rice powder or pink food coloring to create the pink dough.
Shape the Rabbits
Divide the yellow dough into 10g balls. Place them on a baking tray lined with parchment paper and gently flatten with your thumb. Shape small pieces of pink dough into ears and cheeks. Use the flat side of a knife or toothpick to create whiskers or facial creases.
Bake
Preheat oven to 150°C (302°F). Bake the cookies for 20 minutes. Cover loosely with foil for the last 10 minutes to prevent browning.
Decorate Eyes
Once cooled, pipe on chocolate dots for eyes using a piping bag or melt bag.
