Ingredients:
Fresh cucumber – enough to yield 300g juice
1 tbsp sugar
30g cornstarch
Shredded coconut – for coating
Water – as needed
Instructions:
Prepare Cucumber Juice: Wash cucumber and cut into small pieces. Place in a food processor with a little water and blend until smooth. Strain to obtain 300g cucumber juice.
Cook Jelly Mixture: Pour cucumber juice into a small pot. Add sugar and cornstarch, then mix until smooth with no lumps.
Thicken: Place over low heat, stirring continuously until the mixture thickens and no longer drips from the spatula.
Set: Pour into a mold and gently shake to level the surface. Let it cool and solidify completely.
Cut & Coat: Once set, remove from mold, cut into small cubes, and roll in shredded coconut.
Serve: Enjoy immediately or store chilled for an extra refreshing bite.
