Prepare the Taro Paste
Steam the taro until soft. In a mixing bowl, add the steamed taro, purple potato powder, sugar, and milk. Mash together until smooth and paste-like.
Form the Dough
Add glutinous rice flour to the paste and knead until it becomes a soft, pliable dough.
Add Cheese Filling
Take a small amount of dough and flatten it in your hand. Place a few cheese shreds in the center and wrap the dough around the cheese to form a croquette shape.
Coat with Egg and Starch
In a bowl, mix egg and a bit of cornstarch. Dip each croquette in the egg mixture to coat evenly.
Bread the Croquettes
Roll the coated croquettes in bread crumbs until fully covered.
Fry Until Golden
Heat oil on low to medium heat. Fry the croquettes until they turn golden brown and crispy. Remove and drain on paper towels.
Serve Warm
Enjoy immediately while the cheese is still warm and stretchy inside!
