1 large potato (thinly sliced)
200g shrimp paste
¼ cup finely chopped carrots
¼ cup corn kernels
Salt and black pepper to taste

Prepare the Potato Slices:
Peel and thinly slice the potato. Marinate the slices with a little salt for 5–10 minutes to soften.

Assemble the Boats:
Take a potato slice, fold gently, and spoon a portion of the shrimp mixture in the center. Secure the shape with a toothpick like a taco.
Air Fry:
Arrange the stuffed potato slices on a foil-lined air fryer tray. Brush each piece with a light layer of olive oil.
Bake:
Air fry at 180°C (356°F) for 20 minutes, flipping halfway through to ensure even crisping.
Serve:
Sprinkle crushed pepper or chili flakes on top before serving for extra flavor and color.
Serving Tip:
Serve hot with sweet chili sauce, garlic mayo, or soy dipping sauce. These golden shrimp boats are crunchy outside, juicy inside, and sure to disappear fast at any gathering!
