Fresh chives – finely chopped
2 eggs – scrambled and cooled
1 tbsp sesame oil
½ tbsp oyster sauce

½ tsp five-spice powder
Dumpling or spring roll wrappers (2 sheets stacked per roll)
Oil – for frying
Cooking Instructions:
Prepare Filling: Chop fresh chives and place them in a bowl. Add 1 tablespoon of sesame oil and mix well.
Cook Eggs: Scramble the eggs in a pan until just set, then let them cool. Chop into small pieces.
Mix Filling: Combine the scrambled eggs with chives. Add oyster sauce, salt, and five-spice powder. Mix thoroughly.
Prepare Wrappers: Brush water over 2 stacked dumpling wrappers and roll them out thinly.
Assemble Rolls: Place a spoonful of filling in the center. Brush water along the edges, fold the wrapper in half, and roll tightly into a rectangular spring roll shape.
Fry: Heat oil in a skillet. Fry rolls on medium heat until golden and crispy on all sides.
Serve: Enjoy warm with your favorite dipping sauce or as is.
