1 medium yam (steamed and mashed)
1 apple (shredded)
A handful of dried cranberries
About 50–60g flour (adjust to form dough)
Cooking oil (for hands and frying)
Steam & Prep the Yam
Peel and steam the yam until fully softened. Mash it in a bowl while warm.
Mix Ingredients
Add shredded apple and dried cranberries into the mashed yam. Pour in flour and mix.
Form the Dough
Knead until all ingredients are combined and there's no visible dry powder. The dough should be soft but not sticky.
Shape the Pancakes
Lightly oil your gloves or hands. Divide the dough into equal portions and flatten into round pancakes.
Pan Fry
Heat a non-stick pan over low heat. Lightly brush with oil and pan-fry the pancakes on both sides until golden brown.
Serve Warm
