500ml pure milk
35g white sugar (adjust to taste)
60g corn starch
Shredded coconut (for coating)
Mix the base: In a clean, oil-free pot, add milk, sugar, and corn starch. Whisk until fully dissolved and smooth.
Cook: Place over low heat and simmer, stirring constantly, until the mixture thickens into a smooth, pudding-like consistency.
Chill: Pour the mixture into a mold, tap gently to release air bubbles, and refrigerate for at least 2 hours until fully set.
Cut & Coat: Once chilled, unmold and cut into bite-sized cubes. Roll each cube in shredded coconut until evenly coated.
Serve: Enjoy immediately for a cool, refreshing treat. Best served cold.
