Ingredients:
Dough:
250g all-purpose flour
2g salt
90g boiling water
80g cold water
Oil (for brushing)
Filling:
Chinese chives, chopped
Sesame oil
Eggs, cooked and chopped
Krill meat (or small shrimp)
Salt, to taste
Oyster sauce, to taste
Instructions:
Prepare the Dough:
In a large mixing bowl, combine flour and salt.
Pour in 90g boiling water and stir quickly.
Add 80g cold water and continue stirring until a shaggy dough forms.
Knead into a smooth, soft dough.
Divide into small balls, brush each with oil, cover with plastic wrap, and let rest for 40 minutes.
Make the Filling:
In a large bowl, mix chopped Chinese chives with sesame oil to prevent moisture loss.
Add chopped cooked eggs, krill meat, a pinch of salt, and a small amount of oyster sauce. Mix well.
Assemble the Pancakes:
Flatten a rested dough ball into a small disc.
Place a generous spoonful of filling in the center.
Wrap and seal the dough, then gently flatten into a round pancake shape.
Cook the Pancakes:
Preheat a frying pan and lightly oil it.
Place pancakes in the pan, press gently, and cover with a lid.
Cook until the bottom turns golden brown, flip, and cook the other side until golden.
Serve:
Enjoy hot for the crispiest texture, or let sit for a softer bite.
