Ingredients:
200g sweet potato (peeled and sliced)
2 pieces of hand-grabbed pancakes (or store-bought Chinese flaky pancakes)
1 egg yolk (optional, for brushing)
100g grated cheese (cheddar or mozzarella)
Optional: black sesame seeds for garnish
1. Steam the Sweet Potato
Peel and slice sweet potatoes. Steam for 12–15 minutes until soft, then mash into a smooth paste.
2. Prepare the Bottom Layer
Place one pancake on a flat surface or baking sheet. Sprinkle a generous layer of grated cheese.
3. Add Sweet Potato Filling
Spread the mashed sweet potato evenly over the cheese layer.
4. Add More Cheese
Sprinkle another layer of grated cheese over the sweet potato for maximum gooeyness.
5. Seal with the Second Pancake
Place the second pancake on top. Press edges to seal. Brush the top with egg yolk and sprinkle with black sesame seeds if desired.
6. Cook Until Golden
Heat a non-stick pan on medium-low. Cook each side for 4–5 minutes or until golden and crispy.
7. Slice & Serve
Cut into squares or wedges and enjoy warm with a stretchy cheese pull!
