3 medium potatoes, peeled and steamed
8–10 medium raw shrimp, peeled (tails kept on)
1 tbsp cooking wine
1 tsp shredded ginger
Salt and black pepper to taste
½ cup shredded cheese (mozzarella or any meltable cheese)
1 egg (beaten)
Cornstarch (for coating)
Breadcrumbs (for final coating)
Prepare the Mashed Potatoes
Steam the peeled potatoes until soft. Mash them thoroughly and season with salt and crushed black pepper. Mix until smooth.
Marinate the Shrimp
In a bowl, mix shrimp with shredded ginger, 1 tablespoon of cooking wine, a pinch of salt, and some black pepper. Let it marinate for 10–15 minutes.
Wrap the Filling
Take a portion of mashed potato and flatten it in your palm. Place a shrimp and some shredded cheese in the center, making sure the shrimp tail sticks out. Wrap the potato tightly around the filling and shape into a ball.
Coat the Balls
First, roll each ball in cornstarch. Then dip into beaten egg. Finally, coat evenly with breadcrumbs.
Air Fry
Preheat your air fryer to 180°C (356°F). Place the shrimp balls inside and air fry for about 10–12 minutes or until golden brown. Flip halfway for even crisping.
Serve
Drizzle with ketchup or sweet chili sauce and serve hot! Enjoy the gooey cheese and crispy crust with every bite.
