50g butter (softened)
15g powdered sugar
1 cooked egg yolk (mashed and sifted)
50g corn starch
50g low-gluten flour
6g strawberry powder
A small amount of matcha powder (for leaves)
White chocolate (for decorating seeds)
Soften Butter:
Let the butter sit at room temperature until soft enough to press easily. Add powdered sugar and stir until smooth.
Add Egg Yolk:
Sift the cooked egg yolk into the butter mixture. Stir evenly with a spatula until fully blended.
Form the Dough:
Sift in corn starch and low-gluten flour. Stir evenly to form a smooth dough.
Color the Dough:
Divide a small portion of the dough and add matcha powder for the green leaf part. Add strawberry powder to the remaining dough and mix well.
Shape Cookies:
Roll strawberry dough into small 8g balls and slightly flatten them into a strawberry shape.
Use the green matcha dough to create decorative leaf shapes and press them on top.
Place on a baking sheet lined with parchment paper and press lightly with your thumb.
Bake:
Preheat the oven to 150°C (302°F).
Bake for 20 minutes. Cover with foil for the last 10 minutes to avoid browning.
Decorate:
Once cooled, melt white chocolate and pipe small dots onto each cookie to mimic strawberry seeds.
