Ingredients:
10–12 fresh shiitake mushrooms
200g shrimp paste
1/4 cup finely chopped carrots
1 tbsp soy sauce
1 tbsp cooking wine
1 tsp starch
1/2 tbsp oyster sauce
Salt and black pepper
Sauce:
1 tbsp soy sauce
1/2 tbsp oyster sauce
1 tsp starch
Steamed mushroom juice
Garnish:
Chopped green onion
Instructions:
Mix shrimp paste with chopped carrots, soy sauce, cooking wine, starch, oyster sauce, salt, and black pepper.
Remove the stems from shiitake mushrooms and fill each cap with the shrimp mixture.
Steam for 12 minutes.
In a pan, combine soy sauce, oyster sauce, starch, and mushroom juice. Bring to a boil until slightly thickened.
Pour the sauce over the steamed mushrooms and garnish with chopped green onion or thin green onion curls.
Serve warm.
