For the Dough:

  • 5g yeast
  • 300g water

For the Filling:

  • 300g ground pork
  • 3 scallions, chopped
  • 2 tablespoons soy sauce

For the Shortcrust (Optional):

  • 30g all-purpose flour
  • 20g oil

For Garnish and Cooking:

  • White sesame seeds
  • Water (for steaming effect during frying)
  • Cooking oil

Cooking Instructions:

  1. Prepare the Dough:

    • In a large bowl, combine 500g flour, 5g yeast, and 300g water. Knead into a smooth dough. Cover with a damp cloth and let it rise until it doubles in size (about 1-2 hours).

  2. Make the Filling:

    • In another bowl, mix ground pork with chopped scallions and soy sauce until well combined. Set aside.

  3. Prepare the Short crust (Optional):

    • In a small bowl, mix 30g flour with 20g oil until smooth. This will be used to create additional flakiness in the bread.

  4. Shape the Rolls:

    • Once the dough has risen, roll it out into a large rectangle. Spread the short crust mixture evenly over the surface (if using).
    • Spread the pork filling evenly across the dough and sprinkle more chopped scallions on top.

  5. Roll and Slice:

    • Starting from the long side, roll the dough tightly into a log. Use a knife to cut the log into even-sized rolls, about 2-3 inches wide.

  6. Add Sesame Seeds:

    • Lightly wet the surface of each roll with water and press it gently onto a plate of sesame seeds to coat one side.

  7. Cook the Rolls:

    • Heat oil in a large skillet over medium heat. Place the rolls sesame-side down and fry until golden brown on one side. Flip and fry the other side.
    • Add a splash of water to the pan (around 2-3 tablespoons), cover with a lid, and let the rolls steam for 3-5 minutes until fully cooked.
