Prepare the Dough:
In a large bowl, combine glutinous rice flour, sticky rice flour, and pumpkin powder. Gradually add warm water, stirring continuously, until a non-sticky dough forms. Take a small piece of dough, boil it, and mix it back into the main dough for elasticity.
Shape the Dumplings:
Divide the dough into small, even portions. Flatten each piece into a round disc. Place a spoonful of red bean paste in the center and gently fold the edges to seal, forming a ball.
Coat with Glutinous Rice:
Roll each filled dumpling in the soaked glutinous rice, pressing lightly to coat evenly.
Steam:
Line a steamer with banana leaves or parchment paper. Place the dumplings in the steamer, leaving space between each one. Steam over boiling water for 20–25 minutes or until the glutinous rice becomes translucent and sticky.
Serve:
Allow to cool slightly before serving. Enjoy the delightful fragrance of jasmine combined with the sweet, smooth filling.
